Whilst I can't help but find it mildly annoying that Liverpool always seem to get all the cool chains some time after London, Leeds and Manchester, in the case of our latest restaurant signing it was definitely worth the wait. Bundobust is a Leeds-born phenomenon that gained an equally fond reception when they opened their doors in Manchester and now, finally, we have one of our very own.
Bundobust occupies a space on the upper stories of Bold Street and is a glorious, modern, pastel outfit complete with it's own merch making it look like a restaurant straight out of a Universal theme park. The recipe for it's success is simple: craft beer and Indian street food.

Don't be alarmed by the disposable tableware, this is an extremely well-thought out operation. Those bowls, cutlery and plates are completely compostable, you can chuck 'em straight in the bin without a second thought right before you move on to devour the bigger plates.

The Vada-Pav (that thing up there that looks like a burger) has amassed a cult-like following and it's easy to see why. A ball of deep fried, spicy mash on a brioche bun with fiery green and red chutney. Double the carbs, double the fun, but make sure you eat that one last, you'll need a lie down afterwards.
Equally deserving of a fan-club is the Panner and Mushroom Tikka, fiery cubes of Indian cheese slathered in spinach chutney and a sweet red pepper ketchup. Enough to convert even the most ardent of mushroom-haters (myself included).
Bundobust don't make a big deal about the fact that their menu is completely Veggie and I don't think I need to either- it's worth a visit regardless of your meat-eating inclinations. A super cool, colourful and fresh addition to the Liverpool Food Scene- I can't wait to go back!
